My name is Stephan and I am based in Vancouver, BC, Canada... I was born in France but then moved to Canada very young. Growing up as a kid, I developed a strong passion for food through the aromas of my Italian, French and Canadian family kitchen. EATING IN SPAIN 101.
I guess you noticed that we, the spaniards, always have bread on the table. One of the most gratifying pleasures when we eat is dipping bread. The bread absobs the olive oil, the spices and the juices of the main ingredient in each dish and when you eat a piece of bread soaked in this mix you receive an explosion of flavour in your mouth. Trust in me, it can be addictive.
Also, when you eat something greasy like the sweetbreads, if you eat some bread at te same time it will soften he heaviness of the fat.
By the way, you have choosen very good dishes for trying the gastronomical diversity of sothern Spanish cuisine.

Casa Aranda, churros chocolate, Casa Mira, ice creams and horchata good, Mariano, artichokes with ham, chivito, salad malagueña, olives, Cerveza Victoria. Hummm.😊👍👍 and more. Casa Lola for some excellent tapas.

I'm new here. Thanks Stephan, fantastic video! I've been un Madrid, Barcelona, Sitges, Villanova and Spain is an amazing country for food fanatics! Actually is a Fantastic country overall. Thanks for showing Malaga, hopefully I'll visiting soon.

Few notes
Went to meson iberico in Soho, Malaga high Recs
First, they offered two kinds of morcilla from Burgos in Castile and from Ronda nearby. They all recommended the one from Burgos but you might want to try morcilla de Ronda

The sweetbreads are not veal. From what you wrote they are lamb sweetbreads (Cordero)

The chivo is just goat, often chivito is kid. But it’s possible that all the Chivo there is kid

There’s a kind of sea snail that has a different name outside of Malaga it’s a Murex sis now, like a whelk or similar to a French buccin or bulots. I think it’s busòna in Malaga but elsewhere has a name that begins with the letters CAN

Last if you are going back to Malaga, have a breakfast of churros and hot chocolate at Casa Aranda in the old city. And Casa Mira makes their own Horchata and it’s fantastic

Last, although this dish is originally from caddies, there is a type of ham like product made from tuna, and everyone I spoke to in Malaga, locals, well almost all of them said they prefer it to the Iberian ham
Mojama (del almadraba). It’s not hard to find in Malaga but the large hotels will not offer it or the places that are catering more to tourists. There is a Cadiz style seafood place in Soho Er Pichi de Cái Actually they’re a mini chain I think they have three places in Malaga.

Chiringuitos in the malagueta or the pedregalejo or even in Torremolinos believe it or not are quite good. And oddly enough, although Córdoba is more famous for it the fried eggplant in molasses (Miel de Caña) was better in Malaga Avenue and I had it in a famous place in Córdoba

I had a lot of Spanish food I am not impressed paella 🥘 was the best dish so far other than that nothing special compared to theirs neighbor Italian, French , portages and Moroccan food are away better than spanich cuisine .
