You just transported me back to my grandmother's kitchen. She used to make this all the time. Like you her kitchen was my favorite place on Earth as a child. Nothing but food and love coming from her. That she got older I had her cook her recipes in front of me and I took notes with estimated portions since Italian grandmother's never measured anything and I got to say out of all the grandchildren my versions of her recipes are the closest. Did you ever put country style spare ribs in this dish and call it manasta and beans? That's delicious too. The only thing I would do different is to use dried cannellini beans and let them cook in the water for several hours. It just seems to be a more authentic taste than the canned beans. At least that's what I found when I make pasta fa zoo! Thanks for keeping the old traditions alive Frank. You doing a good thing by keeping your grandmother's recipes and her alive like nice Italian boys should.

In the Netherlands we put raw escarole (which we call andijvie, so endive, which shows how closely related those are) into mashed potatoes with fried bacon (so it does cook down a little). With a side of smoked sausage or meatballs and gravy. It's a really underrated vegetable. It has a nice herbal flavour if it's boiled and the "raw" version has a bittersweet note, like brussel sprouts. It's also incredibly cheap and nutritious.

I am a huge fan of any type of Beans and Greens, or braised greens of any kind for that matter. My grandma didn't make this dish, but just hearing you talking about yours, made me harken back (yes, I said harken) to my grandma making chicken and noodles, with racks of homemade noodles hanging all over. I can almost smell her kitchen now. Thanks Frank! #TimeToTaste

I will probably need to make this. My father loves escarole & bean and always got it when we went to the local pizza place. He could tell when they had a substitute in the back and it got to the point where the owner would go to look around the dining room, spot us, run back into the kitchen, and as we would be going to leave he would give a container of the soup to my father (because it took a bit to make). They moved, and has been unable to get the soup where he is now. So this would be a treat.

This is a great cucina povera recipe. I grew up with my Italian immigrant grandparents and we had scarola e fagioli often. Their recipe was pretty similar to this except in the summertime we would add in fresh tomatoes near the end of cooking that came from our garden and we used homemade chicken stock when it was on-hand. I still make it often and think of them. Good job, Frank. Another hit!

This is a truly truly Italian dish. I feel like you hardly see it at restaurants but it is SO GOOD. Great comfort food.

Chef Frank thank you so much for sharing your grandmas recipe with us. When a family recipe is shared it just seems extra special. I'm always transported back to my grandmas kitchen for Sunday dinners anytime I make a roast beef. I've never had this before but it looks so hearty and tasty. Thanks!

Wow, you brought me back to my grandmother’s cooking with this one. One of my grandfathers favorite meals. I can remember him eating this and cutting big chunks of crusty bread and dipping it in the broth. Have to admit I forgot this dish and definitely going to make it soon. Nice time of year for comfort food like this. And oh yeah, Pecorino Romano cheese is way better than Parmesan lol.

Good food doesn't need to be complex, expensive or require days to prepare. A soup, so simple it doesn't even start with a both! Just greens, beans, garlic and oil.

Growing up, we would call this dish "minest" (I think the proper term is "minestra"). But pretty much any greens and any beans you have will work. The peasants in southern Italy weren't really that picky about their ingredients; they used what they had on hand.
