Peach Purée from the Cocktail Dudes

We use our peach purée primarily in the classic Bellini cocktail. The white peaches we use to make the puree give a fresh sweet flavor which are perfect (and traditional) for the Bellini. This purée would be well suited for use in creating your own summertime cocktails, as well! Cheers!

I’m having issues of the purée containing too many bits? It’s not smooth and ends up turning the Bellini too cloudy and very bitty. Any advice? x

I can't tell if your white peaches were peeled or not. Is it necessary or preferred to peel the peaches? I'm getting conflicting info.
