Hello Jay. A great review as always.
I have to tell you that if you want the tablet's Atom CPU to go all the way up to 2.16 Ghz you need to enable burst mode through the Bios menu. 
Also- can you tell us how's the battery time of the tablet?
I'm really interested and that is the only aspect that keeps me off buying that tablet.

This processer has a variable boost, when using more apps/ programs it will give you more speed ( like over clock?)
Looks like you have some Chinese version with 32 bit windows? Mine came in English out of the box and was 64bit window 8.1. From tinydeal
