So, here’s how I think the band started:
Yoshi must’ve moved on from carrying Mario everywhere to become a drummer.
Sans, after moving to the surface, took bass lessons, and later formed a band.
It’s probably Loona’s day off, so she decided to spend the day jamming with the soon to be formed band.
Snake probably retired from his stealthy lifestyle, and decided to pursue as a vocalist.
That’s how I think the band was formed.
