simple and delicious Masala Pulao recipe that you can make at home:

Ingredients:
1 cup basmati rice (soaked for 30 minutes)
2 tbsp oil or ghee
1 large onion (sliced)
1 tsp cumin seeds (jeera)
1 bay leaf
2-3 cloves
1-inch cinnamon stick
2-3 green cardamoms
1 tsp ginger-garlic paste
1 large tomato (chopped)
1 cup mixed vegetables (carrots, peas, potatoes, etc.)
1 green chili (slit) (optional)
1 tsp garam masala
1 tsp turmeric powder
1 tsp red chili powder
Salt to taste
2 cups water
Fresh coriander leaves for garnish
Instructions:
Prepare the Rice:

Wash and soak the basmati rice for about 30 minutes. Drain the water and set the rice aside.
Sauté the Spices:

Heat oil or ghee in a large pan or pressure cooker. Add cumin seeds, bay leaf, cloves, cinnamon, and cardamom. Sauté for a few seconds until they release their aroma.
Cook the Onion and Masala:

Add the sliced onions and fry them until golden brown.
Add the ginger-garlic paste and green chili (if using). Sauté until the raw smell goes away.
Add chopped tomatoes and cook until they turn soft and mushy.
Add Vegetables and Spices:

Add mixed vegetables (carrots, peas, potatoes) and cook for 3-4 minutes.
Add turmeric, red chili powder, garam masala, and salt. Stir everything together.
Add Rice and Water:

Add the soaked and drained rice to the pan and gently mix it with the vegetables and spices.
Add 2 cups of water, bring it to a boil, and then reduce the heat to low.
Cover and cook for about 15 minutes or until the rice is fully cooked and the water is absorbed.
Garnish and Serve:

Once cooked, fluff the rice gently with a fork.
Garnish with freshly chopped coriander leaves.
Serve hot with raita, yogurt, or any side dish of your choice!
