Those swirls are density waves. As heat rises molecules spread making them less dense in the immediate area surrounding the glass. The temp delta is what causes the swirls to be visible in this case. Same concept when you look at the hood of your car while it's running as the air exchanges heat with the ambient air outside of the engine bay. Similar density waves can be visible when mixing 2 liquid solutions of different densities. Hence why they're called density waves.
