THE summer salad!🥗

RECIPE (4 servings, 25min prep time):
-about 800g tomatoes of your choice
-a good pinch of salt
Chop the tomatoes into bite sized pieces and add them to a colander over a bowl
Add the salt and let it sit 15mins to get the tomato juices.
-2 Tbsp balsamic vinegar
-4 cloves garlic, finely chopped
-2 shallots finely chopped
-pepper to taste
-1/3 cup (80ml) olive oil
ADD everything to the tomato juices and mix well
-1 medium zucchini, sliced
Add it with the tomatoes to the dressing and toss.
-1/2 bread
Tear it into chunks and fry in a little oil until crispy.
Add it to the salad with basil and mix.
I served it with balsamic glaze and vegan feta.
