Silly question, but can all those actions be recorded to Ableton and played back/edited later??

I'm curios if it can function just like guitar freeze pedal for live playing situations. Like is it possible to freeze one note and make it stay and keep playing through the same channel but that freeze doesn't freeze te rest of the notes?? Hope I speak clear
