Low-Carb Creamy Mushrooms and Spinach

You'll need:
2 tablespoons avocado oil
¼ cup minced shallots
16 ounces button mushrooms, cut into slices
salt and pepper (to taste)
6 ounces of fresh baby spinach leaves
1 teaspoon lemon zest
¼ cup heavy cream
¼ cup grated Parmesan cheese
