I just discovered these marvelous sun chokes. They are incredibly tasty, even my 3-year old couldn’t stop eating the thinly sliced sun chokes I put in a salad. Amazingly good.

I grew my own sun chokes as an experiment. I got a huge harvest, and found your recipe on here. Made it today and it is to die for. Tastes like a really rich potato soup. Yum…thanks !
