I made this cake today, it was really good. Here are some observations:

You can use normal sugar instead of icing sugar for the icing and if you don't have vanilla extract you don't need to use it (it will still taste rlly good).

The lemon flavour is really strong so if you don't want it to be that noticeable use less of it.

The amount of sugar that I used in the cake was only about 200g instead of the original amount and the cake was still sweet so you don't that have to use that much sugar.



The jam will take a long amount of time to be ready but will eventually thicken and combine so you have to be patient about that.

If you don't want a pretty thick layer of icing and jam on the cake you will end up having a lot of leftovers of those two. Their flavours are really strong so i recommend using less icing and jam with the cake and only use 2/3 of the amount of the ingredients displayed in the video.

Lemon Blueberry Poke Cake

For cake:
> 225g butter, softened
> 225g caster sugar
> 240g self raising flour
> 1 tsp baking powder
> 4 large eggs, room temperature
> 1 tsp vanilla
> 2Tbsp milk, room temp

For blueberry jam:
> 270g blueberries
> Juice of one lemon
> 1 Tbsp caster sugar
> 1 Tbsp cornflour/cornstarch + 2tsp water

For icing:
> 100g butter, softened
> 200g cream cheese, room temperature
> 2 Tbsp lemon juice
> zest of 1 lemon
> 225g icing/powdered sugar


Method:
(For cake)
- Add all ingredients to a large bowl, whisk until combined, spread into lined baking tray, smooth batter and bake in oven at 150°C fan forced for 35-40mins then allow to cool (in pan)

(For jam)
- Add all ingredients into a saucepan and simmer over medium heat for 5 minutes then add cornflour mixed with water, mix until combined and allow to cool.

(For icing)
- Whisk together softened butter and room temperature cream cheese until creamy.
- Add lemon juice + zest, combine.
- Sift in icing sugar and mix until smooth.

(To assemble)
- Poke holes into the cooled cake then spread over blueberry jam, making sure to fill the holes.
- Spread over lemon icing and smooth out

Top with blueberries and then refrigerate for at least two hours, then enjoy!

NOTES:

> tsp = teaspoon
> Tbsp = tablespoon
> 150°C = roughly 302°F
> cornflour is also known as cornstarch
> icing sugar is also known as powdered sugar

For those who dont know, castor sugar is just really fine sugar. Not quite confectioners sugar. Its a bit more grainy.
