This is amazing. And to think this process has been handed down for 150 years. I would love to go work and learn it with them. Who knew every time I would see the blooms on the pal.s trees in California, that ON coconut trees is where the sugar was coming from. 😮 Not tapped like a maple tree. Very interesting and interesting people.

If you let that liquid from the coconut tree sit for a day and add this tree bark it ferments into an alcoholic beverage we call “tuba” in bisaya( dialect of Filipino) leave it for another day and it becomes vinegar, a really flavorful vinegar.
