Let's cook a vegan Malaysian rendang! This recipe is based on the chicken rendang recipe that my mum makes every year for Hari Raya! Instead of chicken, I'm swapping it for young jackfruit and enoki mushrooms for some unbelievable texture.

Vegan Rendang with Jackfruit & Enoki Mushrooms (Chicken style)

2 cups fresh shredded coconut, toasted and blended or 70g of kerisik
5 big red onions (or 10 shallots)
1 bulb garlic
10 red chilies
2 inches galangal
2 inches ginger
2 inches turmeric
4 stalks lemongrass
10 dried chilies, soaked
3 cans Nature's Charm Young Jackfruit
6 packets enoki mushrooms
1 turmeric leaf
4 kaffir lime leaves (daun limau purut)
250ml coconut cream
250ml water
Salt to taste
MSG (optional)
4 tbsp or more, cooking oil

Hi, how about using veg chicken chunks available from supermarkets instead of Jackfruit & Enoki? Can I use yogurt instead of coconut cream? Looks redangstic!
