Fresh Creamy Lettuce Soup | Lettuce Soup With Sweet Potato | Vitamix Soup Recipe

This Lettuce Soup Recipe is so delicious and easy to make. The sweet potato adds sweetness to this creamy soup. It is perfect for fall and winter or when we have too much lettuce in our garden.

✅ Ingredients:
3 lettuce (375 g) (Sucrine Lettuce or Romaine Lettuce)
1 medium size (250 g) Sweet Potato, cut into pieces
2 medium size (125 g) onions, chopped
2 cloves of garlic, chopped
2 tbsp (30 g) Unsalted Butter
3 cups (720 ml) Water
3/4 cups (180 ml) Cooking Cream 35 %
1/2 tsp (3 g) Salt
Pepper
Chili Flakes (optional)

Just collected a lot of different salad leaves and rocket thinking I may Tey this and leave out the cream so I can pressure can it and add cream when reheating

I had a ton of lettuce a neighbor had given me. This recipe sounded yummy and I figured I could use all of the lettuce. I didn't know what Vitamix was. I figured it was some sort of healthy soup thickener I could just stir in at the end; but I had all of the other ingredients. Was I ever WRONG! My food processor was no match for all that lettuce. Now I have two quarts of hideous looking liquid that no one would ever want to eat, no matter how good it might taste. Is there anything I can do to liquidify this mess? Or do I simply have to go get myself a Vitamix?
