InDesign Customized Start Page Numbering

InDesign's Auto Page Numbering feature starts placing numbers on pages with the first page of the document, however in some cases i.e. books, we would want out page numbering to start on a page that we define.

In this video you will see 2 simple steps to achieve this.

Step 1: Apply "None" master to pages to omit numbering.
Step 2: Select the page you wish to start numbering then choose "Allow Selected Spread to Shuffle" from the hamburger menu.
Step 3: Again from the hamburger menu while the page is still highlighted, select "Numbering & Section Options"

Does any know how to do this if the page is 7 instead of 6 (not a joke) when you use the second page of the spread it get divided in two parts and the whole book gets in disordered, ... any idea how to keep spreads togheter???? :( I'm going crazy
