Hi! There is a ABS Dongle from LSK Motorcycle Electronics that you just connect to the diagnostic plug and it then the OFF-Road mode holds its state even after turning the keyswitch off.
And this guys also added the possibility to turn off only the rear ABS while front one is still active. 🙂

Can I turn off only a rear wheel and rep on the front ?

When the off-road mode is on, you turn off the ABS in both wheels or just the back one?

Hi Lionel. Just like u i am a bloke in his mid fifties who is just starting out with an adventure bike. Although i have ridden dirt bikes all my life and currently have a yz250f mx bike, it has been a bit of a learning curve transferring skills to the much bigger/heavier T7. You have some stunning locations to ride in there mate! Most of SA is flat desert country or farmland, hardly any mountainous/ native forest areas where we can ride. :(
Re your ABS vid.
My T7 does exactly as you have shown - without the engine actually running - but, when i start the engine in off-road-mode and then hit the kill switch, it reverts back to abs on when i flick the kill switch back on and re-start the engine. Can you see if this is the case with u? IE: turn the ignition on, start the engine, set to off-road-mode, hit the kill switch (or simulate a stall), and then turn the kill switch back on and restart the engine. I don't know if i have done something wrong but, doing exactly what u have shown i get the same results as you do, but not if I actually do the process with the engine running/ stopping/restarting.
