Hi Lovelies,
today I have a very lemony cupcake recipe for you with homemade lemon curd. Yummy! :) These cupcakes are packed with lemon flavour. You have a soft lemon poppy seed cupcake, a creamy melt in your mouth cream cheese frosting and very lemony homemade lemon curd. Doesn't it just sound finger-licking delicious? :) Just going to say, I know it is! :) These cupcakes have such a spring feeling to them that I think they would make any Easter table look complete. However, you can also bake them any time of the year. Enjoy! :)
Ingredients:
(makes 12 cupcakes)
- 85 g soft butter
- 170 g sugar
- 2 eggs
- 210 g all purpose flour
- 1 1/2 tsp baking powder
- 100 ml kefir / buttermilk
- 1 tsp vanilla
- zest of one organic lemon
- 2 tsp poppy seed
Lemon Curd:
(makes about 500ml lemon curd)
- 6 egg yolks
- 225 g sugar
- 150 g freshly pressed lemon juice (3 big lemons)
- 150 g soft butter
Cream Cheese Frosting:
- 300 g cream cheese
- 50 g powder sugar
- 50 g whipping cream
- zest of one organic lemon
- poppy seed for decoration
- fresh mint for decoration
Bake the cupcakes in 175°C for 20-25 minutes.
