Xacuti is derived from the Portuguese word 'Chacuti'. It is a blend of spices that are dry roasted along with Kashmiri Red Chillies; and is ground along with coconut that is roasted along with onion and green chillies. It is famously prepared using Chicken called as Chicken Xacuti and can be also prepared using Mutton i.e. Mutton Xacuti. The famous vegetarian take on this dish is Mushroom Xacuti usually found in Restaurants.

Chicken Xacuti is a famous Goan dish cooked for almost all occasions, and goes well with freshly baked bread called 'Pao' or some steaming hot Rice or Peas Pulao.

The Xacuti masala can be prepared in advanced and stored in an air tight container for upto a year, and can be used to prepare the Xacuti instantly.

Ingredients for the Xacuti masala:
8 - 9 Dry Kashmiri Red Chillies
1 Tsp Cumin seeds
1 Tsp Fennel seeds
1 Tbsp Coriander seeds
1 Tsp Poppy seeds
1 inch Cinnamon Stick
4 - 5 Cloves
1/2 Tsp Black peppercorns
3 Green Cardamoms
1 Black Cardamom
1 Star Anise
Mace - small piece
Nutmeg - small piece

Dry Roast all the spices on a pan until fragrant on medium heat by stirring at regular intervals, take care that the spices don't burnt. Let it cool aside. Grind the spices to a dry powder.
This powder is the Xacuti masala powder. That can be prepared in bigger batches and stored in an air tight container for up to a year.

For 1 kg Chicken, around 2 - 3 Tbsp of this Xacuti masala is to be used while preparing the Xacuti.
