Hi Becky good vid. To tap the tree we teach people to cut the end off a thumb thick branch on the birch tree and then tie it down with some chord with a bottle taped over the end. We feel that you can still get a reasonable quantity from the tree without cutting into the tree and leaving a potential for pathogens to get into the tree.

Great video Becky. You are using a nice old brace there, but the bit you are using is a modern, cheap flat bit, made for use in a high speed electric drill. An auger is the corkscrew type & has usually two, sometimes one, sharp blades at the edge to cleanly sever the wood fibres. Typically a really old fashioned wood auger is similar but does need the brace, but just uses a wooden T piece to allow turning by hand.

Becky, well presented. Your voice is very uniform and calm. AND that was awesome knife work!
Did you know you can do the same thing with fur trees to collect "loose pine" you can dry out over a few weeks sitting in the air?
Not for drinking, but for making pitch glue. (Mixing the sap with charcoal and fibers. I use cattail heads for fiber, they are uniform.)
Anyhow, again, well done. THANK YOU! You give me Hope for the younger generations, for whatever that's worth.

It is a great technique, I did not know it, I wonder if it is applicable to different trees or only to birches?
