I like to turn the heat down before adding butter/aromatics. Butter can burn super quick and add a more bitter taste.

What size of pan is this? I want to cook 2 ribeyes at the same time and don't know whether to get a 13.25in or 15in lodge cast iron.

I do a similar method. I only use beef tallow or lard, so i just get my pan to 425 in the oven. Then i pull it out and set it on a stone pad thing my wife bought. Then i add the tallow. Then the steak for 1.5 mins per side ( normally thick prime cut ribeyes). Then add some butter and rosemary and baste for about 2 mins. Let rest for 5 mins. This way i dont carbonize my smithy and keep the bronze sheen.

Yum. Watched a show on a restaurant that charges $100 a steak. They have a stainless steel bath with 75% soya sauce to 25% Worcestershire sauce. They put the steak in for 15 minutes, then onto a hot grill. Now I do that and it is amazing. I just make the mix and put the steaks in a ziploc with it. And just add cracked black pepper when cooking. And I always use cast iron! 😊

Put them on their sides straight away so some fat can rend out to give more flavour to the oil that the meat is subsequently cooked in

Just a suggestion, you should discover ghee, aka traditional clarified butter, ghee does not burn easily and can use at higher heat and a bit healthier to cook with than peanut oil.

Knowing that the steak will continue to cook for several minutes after you remove it from the pan, you're going way past the temp you cut it at.

Also, the thyme goes into the butter and not resting on top of the steak lol.

Also also, the number of steaks in the pan shouldn't impact the cooking method. There's no reason why you can't baste 2 steaks in a pan.

Peanut oil on iron? For what? Fail. Just put the meat on the damn pan. Burned the butter, bitter.

Season, Sear, cook to 125°, wrap in foil with butter thyme and rosemary till 135° carryover cook. Fuckin done.. not hard.
