My grandmother used ham hocks simmer them first in chicken broth and then pick the meat. Makes a great base broth for the green beans and potato’s. Cheap and feeds the family. We make till this day and kids love it.

Damn, that takes me back to when I was a kid and my Mom would make something like this. She'd cook chunks of jowl bacon with green beans and potatoes (she preferred using red potatoes because she grew up in North Dakota where red potatoes grew abundantly there). She use to say other potatoes cooked ok but with a red potato, you could do anything with them, fry them, boil them, bake them, etc
