This video actually helped me a lot,
I’ve made about 5 loaves of bread now using all purpose flour, I’ve been thinking it was something I was doing wrong, it’s very helpful to know that bread flour is much better than all purpose

No bread flour? NO problem! Make your own bread flour. Just add vital wheat gluten flour to your all purpose flour. Using the mix ratio of 1-1.5 tsp to 1 cup of AP. Give it a good mix and boom... you have bread flour. Adding up the cost of both, it comes out MUCH cheaper than buying bread flour too.

Bread flour is a lot higher in gluten than AP flour, but if you work AP flour enough (and add less water) you can get it around the same consistency as bread flour.

That’s why my focaccia keeps coming out weird 😂 I’ll do bread flour next time

The flour is not the problem!!! Different flour requires different hydration and other things.
