I have been cooking regularly since I was a senior in college (mid-70s). One thing I have learned is that every pan has a learning curve. Yes, that's right, every pan, including non-stick pans. My vintage Griswold cast iron cooks differently from my modern day Lodge cast iron; both cook different from my copper pans; different brands of copper cook differently than its competitors.

FWIW, I don't like cooking in teflon or similar treated non-stick pans. I find food doesn't sear as well, there is less Maillard reaction, eggs have a rubbery texture, etc. But each pan cooks a little differently so you have to "learn" each pan's unique characteristics.

After trying *a lot* of products, my perfect set consists of Staub 7qt Dutch Oven, Smithey cast iron 12, Smithey carbon steel baby farmhouse, Hestan Nanobond set and Masamoto VG knives.

The Control Freak popped up on my radar at some point in the last year or so ago. I really want one but $1500 is a lot of clams, so maybe I'll pick one up when my finances are a bit more secure. As a compromise, I went with a Duxtop induction cooktop. It's similar to the Burton that you have, Uncle Scott. It's a fraction of the price of the Breville and it gets the job done. I enjoy being able to take it outside and cook at our outside bar/kitchen. I also occasionally use it to cook in my room if I don't want to be bothered to go downstairs to use the main kitchen. The Duxtop is pretty and sleek and not overly loud but I still can't wait to get my hands on that Control Freak Commercial unit at some point.

I love my Breville toaster/convection oven with all its settings. it is intuitive and easy to use, and just works. Same with my Breville microwave. I would love the Control Freak, but due to money it is not on the horizon. What i love about its settings as I read the specs, is that the rate the pan reaches temp can be adjusted. I would love to see your thoughts on this setting when you do your review.

I have both Viking gas and a borsch induction. Love them both. Induction is more precise. No spinning problems.

Bought a BCF several years ago. Love it for a consistently steady low a slow. My go to for bone broth and long slow braises. Also really nice for chocolate, caramel, candies etc. I bought mine during a holiday sale and used my credit card points to drop the price below $1, 000. Was the only reason I bought one. After using, very glad I have it.

As an aside, bought a Duparquet saute pan and use a large induction diffuser plate for the pan. Love it. The cooking surface is across the entire pan. Low and slow is perfect in the copper pan.

I'm excited about the 14" De Buyer review. I recently bought a 14" De buyer with 2 loop handles (soldered). It's 3mm thick, has no rivets, and it fits inside the oven! I feel like it's preferable to the one you'll be reviewing 😅. I've been using a 12 5/8" Matfer as my main pan, and I love the smooth cooking surface. I'd been wanting to get a De Buyer, but I really don't like rivets. I was so happy to find this one! I was kind of disappointed about the loop handles, but since you're saying it wouldn't fit in the oven, I'm feeling better about it.

Your point about making omelettes the right way so that you learn the technique is so on point. In Julia Child's omelette show, she makes omelettes in different pans, including non-stick because she knows how.
Because she knows how, I bet her non-stick pan omelette was better than that of someone who doesn't know the technique

Really excited about the Control Freak stuff. Breville has an old video demonstrating a French Omelette cooked on the Control Freak but they use a nonstick pan. I'm curious how well it will work with the carbon steel omelette pan and if it works as well as gas

The All Clad copper core pans are great. I have the 12 inch and it is almost like cooking with regular copper pans. If you can get them discounted, even better
