Love the fold explanation, for once it’s quite clear and explicit before when I’ve tried it I’ve always lost my way right at the beginning and I’ve picked up on your method the space you give between last pleat and new position of thumb. Thanks once again and i think now my Cornish pies will look as they should.

any advice for the crimping coming undone it the oven? Half of my pastis always come undone. I'm pretty sure I'm pretty consistence with how much egg was I use, I've tried with water too, its driving me nuts. I have tried less egg wash, more egg wash, pressing the edges with a fork. I just tried the over the top crimp today, they went into the oven looking beautiful! Every single one fell apart. I've always had this problem with pie tops too, but I haven't had a good pasty in a while. The finish product is usually still tasty, but you can't pick it up. Todays result really has me bummed out and feeling defeated. 3 hours and $40 Canadian down the fucking drain, all the insides are overdone, and the pastry didn't really cook at all 😨
