Ingredients -
1 1/2 Tbsp (30ml) - Olive Oil
1 Tbsp (14g) - Unsalted Butter
2 - Brown (Yellow) Onion, Diced
6 - Garlic Cloves, Chopped
2 tsp - Dried Oregano
1 tsp (4g) - Ground Cumin
3 - Chicken Breasts or 1 Cooked Rotisserie Chicken
1 Tbsp (20ml) - Sambal Oelek (Optional)
4 Cups (1L) - Chicken Broth or Stock
2 - Corn Cobs, Trimmed
2 Cans - White Beans, Drained and Rinsed
Flat Leaf Parsley
Seasoning To Taste
Method -
1. Add 1/2 Tbsp (10ml) olive oil in a pan over medium high, trimmed corn kernels and salt and pepper. Sauté for 3-4 minutes or until corn is lightly charred. Remove and set aside.
2. Place a pot over medium-high. Add the remaining olive oil and onion. Sauté for 5-6 minutes or until softened. Add garlic, dried oregano, ground cumin, salt, and pepper. Mix to combine and cook for 2 minutes, mixing regularly.
3. Add chicken breast, sambar oelek (optional) and chicken broth or stock. Mix to combine, season with salt and pepper and bring to a boil. Reduce heat to medium and simmer for 12 minutes or until chicken is cooked. Remove the chicken and reduce the heat to low. Shred the chicken with a fork into strips. If using rotisserie chicken, shred it up. If your chicken has stuffing, remove as much as possible and use it for another recipe.
4. Add the white beans to the soup and slightly break them up. Simmer for 8 minutes and check the seasoning. Add the shredded chicken and charred corn and mix to combine. Cook for 2 minutes. At this stage, check and adjust the seasoning to taste. Remove from the stovetop.
5. Serve the soup in bowls and garnish with flat leaf parsley and cracked black pepper. The soup can also be finished with a squeeze of lime juice. Dig in.
