➖ Recipe ➖

Ingredients -

1 1/2 Tbsp (30ml) - Olive Oil
1 Tbsp (14g) - Unsalted Butter
2 - Brown (Yellow) Onion, Diced
6 - Garlic Cloves, Chopped
2 tsp - Dried Oregano
1 tsp (4g) - Ground Cumin
3 - Chicken Breasts or 1 Cooked Rotisserie Chicken
1 Tbsp (20ml) - Sambal Oelek (Optional)
4 Cups (1L) - Chicken Broth or Stock
2 - Corn Cobs, Trimmed
2 Cans - White Beans, Drained and Rinsed
Flat Leaf Parsley
Seasoning To Taste

Method -

1. Add 1/2 Tbsp (10ml) olive oil in a pan over medium high, trimmed corn kernels and salt and pepper. Sauté for 3-4 minutes or until corn is lightly charred. Remove and set aside.

2. Place a pot over medium-high. Add the remaining olive oil and onion. Sauté for 5-6 minutes or until softened. Add garlic, dried oregano, ground cumin, salt, and pepper. Mix to combine and cook for 2 minutes, mixing regularly.

3. Add chicken breast, sambar oelek (optional) and chicken broth or stock. Mix to combine, season with salt and pepper and bring to a boil. Reduce heat to medium and simmer for 12 minutes or until chicken is cooked. Remove the chicken and reduce the heat to low. Shred the chicken with a fork into strips. If using rotisserie chicken, shred it up. If your chicken has stuffing, remove as much as possible and use it for another recipe.

4. Add the white beans to the soup and slightly break them up. Simmer for 8 minutes and check the seasoning. Add the shredded chicken and charred corn and mix to combine. Cook for 2 minutes. At this stage, check and adjust the seasoning to taste. Remove from the stovetop.

5. Serve the soup in bowls and garnish with flat leaf parsley and cracked black pepper. The soup can also be finished with a squeeze of lime juice. Dig in.

I know this isn’t exactly a meal prep series, but it’d still be awesome if you included info like how long it lasts in the fridge/freezer and reheating options (I know for this one would be simple but in general). Glad to see you make this a series!

Looks delish Chef Jack!!! As a born raised Cdn farm girl we had a massive veg garden. To freeze corn my job was one of the huskers. To quickly remove the silk if you use both hands twist opposite directions comes off easy.

Absolute masterpiece! I love a good brothy soup, i never liked the blended creamy soups, that are just homogeneous. Thank you chef, one more for the books!

This looks great stuff Chef Jack, love this budget recipe. I can’t think of a name for your budget series but I do like the idea. It’s only 4:25 am and my brain won’t let me sleep so it obviously won’t let me think either 🤔 thank you 👨‍🍳 Jack for another tasty recipe. Love a good soup on these cold days. Hasn’t got over 8 here all week and the nights have been in the minus range. This is going to be dinner tonight.

Legend! Love your videos and this series. I'm so grateful for the grocery prices in the UK compared to Australian, Candian and American friends.
