So I made rice paper spring rolls for the first time a week ago and used warm water because that's what Lisa nyugen said lol. It went great but after a while when the water cooled down, I was too lazy to warm it up again so I let the water be. The spring rolls still rolled perfectly 🤷🏻 so I'm not doing the warm water thing the next time. Just gonna use room temp water

it's just a preference. Warm water will soften the rice paper faster so if you can't do it quickly, use cold water instead. But I always use warm water to make spring rolls and never have it fall apart like the lady said.

i think the temperature of water surely supposed to be lukewarm to cold (not ice cold) because if your water is too hot it's eventually gonna _cook_ the rice paper, if it's too cold it's going to break the whole thing. also don't left the paper too long unattended cause its probably the biggest reason on why did it got super messed up

There are different types of rice paper
1. Required hot water
2. Required water
3. Doesn’t require water

The general rule of thumb is temperature = speed of roller

I can assemble and roll pretty quickly so I prefer hot water as it soften it up fast. If you’re slower I would recommend room temperature water.

We also have an thinner rice paper that doesn’t require water and soften ups with just the moistures from the ingredients.

There also type of rice paper that is meant to be eaten hard. We use it to make BÁNH TRÁNG TRỘN which is basically an rice paper salad and it usually contains chilli, green mango, peanuts and lime. It’s an popular street food in Vietnam. 😂

I've made spring rolls for years with my family and it's all preference. Warm water makes the rice paper soften faster, so if you need to roll a lot quickly (like to make for other family members) it's definitely better. If you're still getting used to rolling them, cold water softens the paper slowly so you can take your time and get the hang of how to roll them.

I did that and it took too long for it to soften so I preferred the warm water.

i just started using room temp water this year. easier than using hot/warm water. no need to rush things when making the rolls

Bruh tbh just use room temp, there's not much difference (unless there's instructions on your packaging then just follow that lol). Normally, if you use hot/warm water it'll be too sticky for you to form a roll, and cold water might need more dunks.

Ngl, it depends on the rice paper itself. Recently got a brand that just refuses to work in cold water and holds even in hot water. Other brands I didn't have that issue but tended to tear more. All same ingredients so maybe it's about thickness or something.

OK I’m sure people already said this but it really doesn’t matter what temp you use. The paper is so thin that it’s gonna soften by the time you’re done putting the fillings anyways. Not to mention, different types/brands of rice paper soften at different speed so the only thing you need to get right is essentially the timing of when to roll.

Also to those referencing Lisa and misspelling her last name, it’s Lisa NGUYEN lol. It’s a small thing but it does bother me that people are getting a very popular last name in my country wrong so here y’a go.

just use any water that is convenient. I'm a local, i know. Use any water that is safe to drink of course, cool/room temp water is fine, cause while u pick ur ingredients, it will soften by the time u done. If use warm, it's gonna be softer, but also kinda more fragile since the rice would kinda "bloom"? Like it is more soft?

For me I use warm water because when I eat it I don’t have to wait a long time until the rice paper is a little stretchy.

I made that mistake the first time I made spring rolls. Was scalding hot, my fingers suffered😂

warm/hot water makes it soften easier! For people who are just starting to use rice paper, I’d recommend warm water :)
