I used to work at a Dutch restaurant in America as a teenager, and I rolled and breaded thousands of these. They were everyone’s favorite and mine as well. This recipe looks like the closest thing to the balls I used to roll.

Fun tidbit (and serving tip): McDonald’s in the Netherlands shapes these as burger patties, and serves them like a burger (with bun), and it is great! It’s called a McKroket. Breading and everything.

Great vid. My granddad made great bitterballen with a lot of meat. Quite a workout!

I'm going to try these! I occasionally make Dutch recipes for our kids as we have Dutch heritage. They love krakelingen & banket 😊 This will be a new recipe to try. Thank you! Please continue teaching Dutch words, & perhaps write them on the screen so we can see the spelling 🍴

Great video! Ziet er heel lekker uit. One of my favorite Dutch snacks. In case people wonder: the average Dutch bitterbal weighs between 20 to 25 grams. The first time making these, I weighted 20 grams of ragout on a scale then placed the ragout in the ice creamer / cookie scooper so I know how much to scoop for the rest of the balls.

"Don't make a kroket, make a bitterbal". It's a saying where I live, like don't complicate your life. Or, "doe normaal dan doe je gek genoeg". Bitterballen is the Friday-after work snack. No kroketten.

Another great video Toine, I love the use of the ice cream scoop to make sure all the bitterballen are the same size, so simple and clever.
Could you fry more of them at the same time, or would it be a problem if they stick together?

Toine my question is what part of a Brisket do you use or prefer.. I am in Texas and we break our whole briskets down.. Is the Flat good enough and do you leave any fat cap and then clean it up after?

Had these in two different places in Amsterdam first place had lots of meat (Was exceptional) second seemed more like heavy on potatoes inside. Thanks Going to make a bunch and freeze them.

So the ragu in Krokets is the same for bitterballen?

With the slowly stewed beef, (“draadjesvlees”), can I put 75% of it in a blender to give it a very smooth texture and than use the other 25% as small shredded strings of beef and add it to it ? I don’t like the texture of big chunks beef in bitterballen or kroketten, makes me think about cat food, ridiculous I know but I can’t help it 😅

And how do we make roux ? And where did the ragout come from ?

I like the way your roux with beef looks, no big chunks in it like with some others . I like mine very blended and just maybe a few strings of beef in it . But I think you skipped the part to show how you made your beef and prepared it with the roux
