I’d say most physical stats go to the ghoul since well.., ghouls have all types of buffs, ands also not taking in the regeneration from radiation.

Durability is same (ghoul tanked many bullets and Arthur took double barrel shotgun from point blank range, got tortured and walked the entire map without treatment) but Arthur has more endurance

L honestly arthur is one of the best protagonist but ghoul's durability is far superior than anything arthur dealt with and ghoul's weapons will give Arthur run for his money

Well for starters, Cooper has not only had 219 years of not only gunslinging experience compared to Arthur's 22-ish, but also has regenerative abilities, literally inhuman speed, and knowledge of anything Arthur could throw at him. His ragged appearance may make him seem weak, but hes far stronger than any of the characters of the RDR universe. He may not be faster than everyone, but hes sure as hell more durable, cunning, and wise.
