Eggplant chickpea stew recipe | Vegan stew in one pot #168

Ingredients:

4-5 tablespoons olive oil
3 Eggplants (750g), chopped
Salt to taste

2-3 tablespoons olive oil
1 Onion (200g), chopped
1 Red bell pepper (200g), chopped
1 Green bell pepper (200g), chopped

1 Can (240g) chickpeas, rinsed and drained
200g Strained tomatoes
1 teaspoon paprika
1 teaspoon basil
1 teaspoon salt

200ml water

Fresh basil, chopped

Fry on each side until golden brown
Cook for at least 5-7 minutes
Cook on medium heat for at least 20 minutes
