You do lose the click as the ball once it is able to change gravity - it does change gravity then and it counts as you finished your click
In deadlocked here author made it so you're not able to change gravity as a ball (you don't touch solid blocks) and since you don't ever change gravity you don't 'finish' that click and everything works

6:46 There is actually a featured level with these mechanics. It’s called Brainless by LandonGMD. It’s rated 3 stars for some reason because apparently just holding is too much for 2 stars these days.

23:36 After testing some stuff, apparently if you hold a click mid-air, the ball will still change gravity after touching the ground, then cancel it, so they probably put a bunch of pads in the ball part so that the ball doesn't touch the ground until it changes back to other gamemodes

Explanation: as soon as you land on a platform as the ball then you lose your buffer, which is why you may have noticed that the ball parts have a lot of jump pads so that the ball doesn’t land on any platforms and the buffer is not lost. I imagine this also goes for other game modes that makes you lose your buffer once you land on a platform as them.

I might be wrong so don’t kill me, just trying to help with what I’ve understood from this video

Funnily enough, the legit version of this, called "least clicks possible" turns most of the RobTop levels into insane-demon worthy levels at times.

I’ve actually made 2 levels using this hold to complete technique myself called “Hold to complete” and “The impossible level”. I’m glad to see EVW do a video on this.

The reason why you liked can't let go so much is because it wasn't made by the creator you played it from, you played a copy of the level.

The original level was called "Hold Let Go"

One click cycles does exist now, and, when u get to ball, portal just says nah and straight up leaves. how these people do it, i dont know.
Edit: there is somehow now a one click version of every main level, played em all, most are cool.
