How to spot bad sea urchin uni

This is how I spot whether uni is not fresh or not. Uni are graded based on their texture, color, and freshness but when you find them at a market, it usually does not list the grade of the uni. It will usually show you what type of uni and the price of it. Uni should look bright orange or yellow and dry on the surface so if it looks mushy, watery, or discolored, it is probably not worth risking it. It should smell like the ocean. Uni that's not fresh can taste fishy, metallic or like soap and overly bitter. The taste of uni varies from the gender, variety, and its diet so even if you get the best grade of uni, the flavor is not guaranteed unfortunately!

The first time I had uni, I could not get the fishy aftertaste out of my mouth. That scarred me for a while until I finally gave it another try at a reputable Japanese restaurant with very fresh uni!

Thanks for sharing! I would be scarred if that was the first uni I had too. :( Glad you were able to reclaim your uni experience with super fresh, creamy, delicious uni! I once saw white stuff on my uni and I. googled it and it said it was spawning? Do you know about anything about that?

Tried it for the first time with urchins I found at the beach, tasted horrible. had one wide as my hand and could barely find any meat in it, mostly brown goo.
