I've always seen Malenia remarking who she is and her achievments as her attempt to keep her sense of self intact. It must be hard remembering who you are when you're costantly tormented by an outer god who wants to turn you into their physical self and is probably trying to convince you that you already are.

I think maybe the rot is getting to her brain. She is starting to lose herself, and when she tells us that she is "Malenia, Blade of Miquella", she is also saying that to herself, to never forget who she truly is.

she doesn’t say it over and over again, every time you die the world goes back in time. it’s the reason godrick has to graft the dragon over and over again.

She isn’t delusional, she’s reinforcing her mental defenses by stating facts about herself to herself. Lots of people speak aloud their plans as a way to solidify their presence in their mind.
