Actually it's the other way around the Fiona's Castle was built on the panda village because the rocks in Shrek are more worn out compared to the ones that are jagged granted a rosian can make things jacket or smooth but this would imply that one is more eroded than the other because it's more likely to go from the point to smooth

Kai was in the afterlife and eventually ended up escaping. He was a real person before he died, but death is just a force of nature. He had nothing to do with Kai escaping the afterlife.
