Well, after watching some McGregor's interviews, I think that he doesn't do that (insulting the opposition) in order to get the other fighter mad or something. 
I think he does it to put himself in a position where it would be really humiliating to lose after talking so much crap. 
I think it's some kind of self motivation strategy. He puts himself in a corner from where he only can get off if he performs at his best.
