How Do Organs Evolve?

Does evolution have an explanation for how hearts, brains, livers, kidneys, reproductive organs, stomachs, ears, and eyeballs evolved? In this video, I'll read and discuss an article that tries to explain organ evolution. Is this a scientific explanation, or just fancy storytelling?

"In contrast to the engineer, evolution does not produce innovations from scratch." We didn't develop our Merlin rocket engines from scratch at SpaceX. We improved on past designs. And we engineers and R&D scientists are in fact "tinkerers" as well. :)

ALL life forms on earth self assemble. I am on your side...but I don't think that is precise. I know you mean that the DNA (code) for a bird, lion, human, etc...does not self assemble.
