That’s some good parenting there. Actions have consequences and these ones were just making him face what he done wrong, learning from it, apologising, and hopefully growing.

NTA- More kids need to be held to account by their parents, for the things they say, and the way they act. It used to be that kids respected authority, and wouldn't have even considered saying something like this in front of an adult, much less their parents, and expect to get away with it. Nowadays, kids get away with it, and it's the PARENTS who don't dare to disagree!!

I mean writing a paper isn't actually gonna teach him about Chinese culture or to respect Chinese people as people, so I think the intentions are good, but it's not really gonna be that effective?

It's hard for people to conceptualize things sometimes, so instead of continuing to other the culture, I think it's better to start off by drawing parallels to things he's experienced? Talk about times when he was singled out or othered and have him make the connection between the uncomfortable feelings that inspired and how he made the delivery driver feel. Otherwise it's gonna end up like some of these comments "bUt BuT bUt sOmE cHiNeSe pEoPLe DO eAt cAtS".

NTA for making him learn about culture and apologize to the driver specifically.

As long as youre also making him (and apparently yourself) learn about how asian countries very much DO eat dog meat in modern times. Dismissing it as some racist stereotype, instead of the irrefutable fact that it is, isnt twaching him about culture. Its burying your head in the sand and trying to pretend they did nothing wrong.

You're teaching him that he cant dispute against very real issues in cultures. That any valid argument against ethically wrong behaviors will just be called racism.
