How to Clean a Lobster (Restaurant Style)

Cleaning a lobster is not that hard. I learned to clean a Florida spiny lobster after about 2 tries. This is the way restaurants prepare their spiny lobster. For cleaning Maine lobster, there is a totally different method. I hope you can dive for some of your own lobster and cook them up!

I lived on Midway island when I was a kid, and dove for lobster, I cleaned the same way except I would break one of the antenna off and insert it into the canal all the way in and twist it, , the barbs would catch all the canals waste you pull it out and you have a clean tail, I sold 10 of those or more everyday $2.00 each, I saved over $1000 over a year, I was only 12

You can insert the antenna into the poop shute spin it, pull it out so the spikes are grabbing outwards and get the vein out without breaking open the shell
