I have had an excellent butternut squash soup that has apple in it. It cuts some of the squash’s natural sweetness.

Another advantage is it uses less energy to cook. Less heat in the summer.

Wonderful video.

I’ve jazzed up mine by adding carrots and replacing some bouillon with Thai yellow curry paste. Have to use just a small amount to add zing!

Rather than heavy cream I use a can of coconut crème (not milk).

I tried this recipe, and love it! I used up some thing I had in my refrigerator. I used homemade chicken broth, powdered onions from my garden, and skipped the cream since I didn't have any on hand. I adjusted the spices for my palate and skipped the pureeing. The butternut squash was soft, and I like the texture of the soup without pureeing. This was so simple and easy without having to do all the prep work for grocery veggies. Thanks for sharing and for your idea to add additional squash after pureeing. That inspired me to not puree it.
