Ah yes, the ever nostalgic Empire Cookies! I've been eating these goodies since I can remember! My grandmother (a Celt) was notorious for having these in her freezer when my mom was growing up! I still remember every Christmas, my grandma would bring her cookie container chalked full of every kind of cookie! You best believe Empire Biscuits were always in there! Every time my own mom would bake them, I couldn't wait for the cookies to cool, be spread with raspberry jelly and a sweet supple glaze to top it all off! I'd pop one buttery sandwich in my mouth and that was it, I was hooked! I always thought it was because my grandma had a Scottish background that these goods were so prominent in our home, but interestingly enough after researching this recipe, I've found they didn't originate from there! They are actually from the Austrian region and simply became VERY popular over in Scotland, England and Ireland! The name can vary depending on where it's from! But in the end, it's a beloved buttery biscuit by all!
