The Olympic Double Chocolate Muffins Recipe:

- 185g Plain Flour
- 40g Cocoa Powder (Sifted)
- 150g Granulated White Sugar
- 1 Tbsp Baking Powder
- 1/4 Tsp Salt
- 240g Milk
- 2 Eggs
- 1 Tsp Vanilla Extract
- 70g Vegetable Oil
- 200g Dark Chocolate Chunks (Plus extra to top muffins)
- 200g Milk Chocolate Chunks (Plus extra to top muffins)

Chocolate Ganache:
- 90g Dark Chocolate
- 90g Milk Chocolate
- 80g Heavy Cream

- Preheat the oven to 175 degrees Celsius and line a muffin tin with muffin liners. Set aside.

- In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, salt and both chocolates. Set aside.

- In a medium bowl, whisk together the milk, eggs, vanilla and oil until combined.

- Add the wet ingredients to the dry ingredients and fold them together until just combined.

- Spoon the batter evenly into each muffin Liner. Top each muffin with extra chocolate chunks.

- Bake for 25-28 minutes or until a skewer comes out clean. Allow to cool slightly.

- Using a small sharp knife, carefully cut out a small hole in the centre of each muffin.

- In a small microwaveable bowl, place the ganache ingredients in and microwave in 30 second bursts (stirring in between) until melted and combined.

- Pour the ganache into a piping bag and cut a small piece off the end. Carefully pipe the ganache into each hole until it is oozing out the top.

- Enjoy!
