A SIMPLE HAINANESE CHICKEN WITH GINGER SAUCE RECIPE

RECIPE:
1pc Whole Chicken
4slice of Ginger
1pc Leeks
To taste Salt

GINGER SAUCE:
150g Ginger
3cloves Garlic
about 1/4cup of Olive Oil or Peanut Oil
A little bit of Sesame Oil
To taste Salt and Pepper
Thinly Slice leeks

Hoisin Sauce
Sriracha Sauce

TIPS:
*It is important to rinse it with cold water to prevent overcooked, and to keep the chicken skin springly.
*After cooking pat dry the chicken with paper towel, and brush it with sesame oil. To prevent from drying.
*Air dry the chicken for atleast 30 minutes before cutting. To keep the moisture inside.

Its a staple since 1990s and we were using oyster sauce eversince, im going to try hoisin sauce

why are you not using hot oil to drizzle on the ginger and scallion for the sauce? the way you show it, it looks like ginger and oil puree with the cold oil, and it will taste awful because the ginger is still raw
