3 Easy Grab & Go Breakfast Ideas | Make-Ahead Breakfast Recipes!

HAM, EGG AND CHEESE POCKETS
 2 sheets puff pastry, thawed and at room temperature
 5-6 eggs, scrambled
 12 pieces ham (or use any meat you'd prefer)
 Cheddar cheese slices
 Use some of your scrambled egg mixture for an egg wash (before seasoning) or use heavy whipping cream
Preparation
 Preheat oven to 350°F
 Cut the puff pastry into six rectangles and place on a nonstick baking tray.
 On one rectangle, place a slice of cheddar, 1 scrambled egg, and 2 pieces of ham.
 Place a rectangle of pastry on top and seal the edges with a fork.
 Repeat with remaining pastry rectangles.
 Brush with wash.
 Bake for 20-25 minutes or until the pastry is flaky and golden.

BAKED HAM AND EGG CUPS
Ingredients
 Deli ham, thinly sliced
 Eggs
 Shredded cheese
 Sliced green onions, optional
 Salt and pepper, to taste
Instructions
 Preheat oven to 350F degrees. Spray a muffin tin with nonstick cooking spray.
 Line each muffin cup with a slice of ham.
 Sprinkle a tablespoon of shredded cheese on top of the ham.
 Crack an egg into each cup.
 Season with salt and pepper.
 Sprinkle green onions on top.
 Place muffin tin in the oven and bake for about 20-25 minutes or until the egg is set.
