I bought an anemometer years ago when my child made a small wind turbine for the science fair out of a little DC motor harvested from a defunct VCR. I would guess that the slow transition for the temp & humidity indoors were due to not having any air flow through the tiny grills getting to the sensor. Perhaps standing near a running ceiling fan or an HVAC register while the system is running, just to get a bit of continuous air flow through it would show a quicker response.
