Chicken souvlaki pita wraps✨
For the Chicken:▪️1 lb. Boneless Skinless Chicken Breast, cut in 1” cubes▪️2 Tbsp Fresh Oregano, minced▪️3 Cloves Garlic, minced▪️1 Lemon, juice▪️1 Tbsp Red Wine Vinegar▪️2 Tbsp Olive Oil▪️1 tsp Kosher Salt▪️1/2 tsp Pepper▪️4 Skewers (optional)▪️2 tsp Avocado Oil▪️
For the Tzatziki: ▪️1/2 a Large Cucumber, grated▪️2 Cups 2% Plain Greek Yogurt▪️1 Clove Garlic, grated or minced▪️1 Lemon, juice▪️1 Tbsp Olive Oil▪️1/2 tsp Kosher Salt▪️
For the Wraps:▪️4 Pitas▪️Cucumber, sliced▪️Onion, sliced in strips▪️Tomato, sliced▪️Fresh Dill▪️
🌱Vegan Modification: Instead of chicken, sauté a 16 oz. can chickpeas (drained) with the rest of the ingredients for the chicken souvlaki; use plant based yogurt in the tzatziki
1️⃣ Place the chicken in a bowl with the oregano, garlic, lemon, red wine vinegar, olive oil, salt, and pepper; mix and marinate in the fridge for at least 30 minutes (up to overnight)
2️⃣ Mix together the ingredients for the tzatziki and set aside in the fridge
3️⃣ Skewer the chicken on 4 skewers (optional) and then preheat a grill pan (or pan) over medium high heat; add oil and sear chicken for 4-6 mins per side until internal temp reaches 165F
4️⃣ Heat pita in a lightly oiled pan over medium high heat for 30 secs - 1 min per side then spread on a thin layer of tzatziki; add cucumber, onion, tomato, and the chicken souvlaki (remove it from the skewer)
5️⃣ Top with more tzatziki and fresh dill and enjoy!
⏲20 minute prep time + 30 minute inactive time + 10 minute cook time
