It turns like that Kev because it’s called counter steer,
That’s how you steer a real bike,
You push steering opposite way to get the bike to lean and then once leaning the bike follows the turn

It's called counter steering real bikes work the same way you steer slightly put of the corner

5:35 this is how steering is on a real motorcycle too. For instance to maneuver left you push left on your handle bars which is actually turning your bars the opposite direction

I had at least 4 R/C motorcycles as a kid. A blue one from Tyco R/C, then a yellow one (same model but newer), then a pair (one 27MHz and on 49MHz) of mini ones...also Tyco R/C. All worked *very* well considering they were just toys from Toys "R" Us and they definitely didn't have a separate gyro that spun up or anything...you'd just lay it on its kickstand and hit the gas. Worked well both on-road and on the grass!

It works with the chain . The chain is connected to the brushless motor then to the wheel

The reason it steers backwards is because of counter steering in order to make a motorcycle lean to the left you actually have to turn the wheel slightly to the right and vice versa for turning to the right you have to turn the wheels slightly to the left that's how motorcycles drive
