Love how Tywin was basically coaching her on how to hide in plain sight and keep people from realizing she is a noble-born lady in disguise. He can see she is high born but doesn't know who she is exactly. Its a delicious irony.

I like to think Tywin was able to notice that she was a tough and scruffy girl, who usually aren't found anywhere else except for the North, because of how wild The North and Northerners are. Plus her ethnic features gave way too.
I like that Tywin assumed the girl must be lying about her identity because she fears they'll torture northerners.

Some of the best scenes and dialogue in the whole show. It made me really respect Tywin for how much care he had shown in educating this unknown charming girl. It really humanizes him!
