The reason we dont cook rice in chicken stock or vegetable stock is because it isnt supposed to taste like something other then rice because it usually has toppings to have a strong flavor, so i will keep on cooking water in rice and you can continue cooking it in (basically) soup
Edit: of course sometimes it is used to make it more flavorful for a certain time!

Bella I started using chicken stock when cooking my rice when I was about 20 yo.

If you add 2 Tsp of salt with the coffee grounds when brewing a pot of coffee it takes the bitterness away.
