I'm guessing because the shell is completely filled there's an equilibrium inside that helps it sustain the pressure, kinda like how coke stays fizzy if the bottle isn't opened

I don't think that was air in the egg. That was water vapor forming as you boiled the egg at the lower vapor pressure.

Someone correct me if I’m wrong, but I’m pretty sure it isn’t air getting sucked out of the egg, it’s the egg liquid boiling because there isn’t any air particles to Collide with it.

Not necessarily a dissolved gas or “air” causing the bubbles. It’s very likely to be the the liquid, mostly water, being boiled due to being under vacuum. This then creates water vapor that gets caught under the layers of very sticky proteins aka the bubbles that you’re seeing.

Yeah, the egg has a pretty sturdy shape, basically a submarine, it could withstand high atmosphere pressure and vice versa.
