Today I got a chance to learn from chef Eric Sze on how to cook with Razor Clams - an extremely under-appreciated ingredient.

I never had razor clams, but with their sleek and elongated shells, they hide some of the best tasting ingredient for any type of cuisine, exquisite in both taste and texture. Harvested along sandy shores, these clams dig burrows in the ground at the rate of one foot per minute 🤯 Razor clams are extremely delicate and have a pleasant and mild sweetness to it that makes it so unique. I’ve been to both China and Italy, I can personally say I like Italian food a lot more. But I can also respect and appreciate a unique fusion of different cultures and flavors

That looks absolutely delicious. I am from Italy and there are a big difference from Asian noodle dish to an Italian pasta dish even the way it is made sometimes so your not making me mad at all that looks delicious

Fun fact: did you know that the Italian got the idea of making pasta as they got inspired by the Chinese noodles? And did you know that the people who invented pasta was Marco and polo?
